GIVING BACK
The philosophy that nourishes and stimulates me is to maintain contact with indigenous and local communities in countries with greater social differences and listen to their needs, observe where they have been degraded as a culture, and from their roots and traditions, understand and inspire them to collect the legacy of their ancestors to make them remember and use again practices and healthy habits implicit in healthy ancient recipes of their culture and to recover habits that have given life and power to their ancestors.
I believe that recovering ingredients and old methods of living in community, applied in a contemporary way to the needs of today, is a great step for the health of the society of the future. Traditions innovating in today’s culture.

Cumbre Tajin Aldea de la Paz
A project that listens to the ancient communities to get closer to their children and the needs in the community. A space of coming closer, to understand their way of life and to learn from them while perhaps we open a space of understanding and exchange of common concerns. The Caravan Group is composed by: Alejandra Balado, Alejandra Cerdeño, Mares Nieto, Salomon Bazbaz, Guelly & Markus Ceiba Mirabai, Eitan, Lina, and Pema, The Chris family.
A trip through Namibia cooking for a group on a mission to build a water well for a Himba clan.
Sharing with the tribes ways to clean their foods in their present conditions. A lot of human learning.
Trip organized by Kailas Kokopelli where we encountered the reality of a powerful people crossing the desert, of a culture cornered into extinction, but with the strength of that same culture beyond the known

Papantla, Veracruz, is the place where the Totonac communities come together to celebrate the Tajin Summit. This is a conscious and common sense food workshop where I have been teaching for several years.
